The Sausage Ring with Onions and Garlic Bread
The “east Coast Cinnamon Roll.”

Ingredients:
2 sausage rings (see notes)
2 yellow onion, sliced
4 cloves garlic, sliced
Salt & pepper
Garlic powder
Semolina bread or Italian hero loaves (see notes)
Garlic Butter:
I stick butter, softened to room temperature
3 cloves garlic, minced
1/4 cup fresh parsley, chopped fine
Before we jump into this - a few things to mention. See notes below on the sausage ring itself if you’re not familiar with this form of sausage.
We made our sausage rings on our Blackstone grill. You can make this the same way on a charcoal grill or gas grill. If you also do the grilled onions, you will need to cook those in a separate pan if you’re grilling the sausage ring on a charcoal or gas grill and use olive oil for cooking.
We make our garlic butter ahead of time. Take all ingredients and mix together. Cover and keep room temperature until you’re ready to grill the garlic bread.
Get heat on grill to about medium - before throwing your sausage on, make sure the grill is hot. You DO NOT need to add any oil if you’re cooking on a Blackstone. The fat from the sausage will create its own cooking oil.
There is no specific cook time for the sausage ring - keep checking the side that’s on the grill - once you see it’s starting to get golden brown, flip it with tongs to the other side, and grill until golden brown on the opposite side. Continue to flip until the sausage looks cooked to your desired color on both sides.
Once the sausage is done, remove to a cutting board and cover.
Cook your onion and garlic in the oil from the sausage on the cooktop, adding salt, pepper, and garlic powder to taste. Once browned, remove from grill to a bowl.
If you’re using a long Italian loaf, cut it in half, and then slice open to make a sandwich. Smother both sides of the bread with garlic butter and place face down on the grill until toasted.
Cut the sausage into bite sized pieces. Put sausage on the toasted garlic bread and top with grilled onions and garlic.
Notes:
One sausage ring serves about 4 people. We made 2 sausage rings, so servings should be about 8 for 2 rings.
The sausage ring is readily available in most butcher shops and speciality markets on the East Coast. However, if you’re interested in trying this in other parts of the country, you likely will need to ask your local butcher to make it. The key to the sausage ring is the smaller casing and they need to add the long BBQ through the ring so you’re able to flip it as one piece on the grill as you can see in the recipe video. If your butcher is willing to make it for you, it’s a fun and amazing way to grill sausage.
We prefer a sausage sandwich on a semolina hero (sesame bread), but you can use any Italian loaf.

This is a classic East Coast summer BBQ special, but this dish can be enjoyed year ‘round and a really easy and crowd pleasing dish for large gatherings.
