Pasta Puttanesca

Pasta Puttanesca

Ingredients:

  • 1 can (28 oz.) San Marzano peeled tomatoes

  • 1 lb. long pasta of your choice (we used Linguine - see notes)

  • Olive oil

  • 1 shallot, chopped fine

  • 3-4 garlic cloves, minced

  • 2-3 anchovy filets

  • 1 tbsp. Calabrian chili paste

  • 1/4 cup white wine

  • 1.5 tbsp. capers

  • 1/2 cup kalamata olives (pitted) (combo of halved and whole)

  • 1/2 cup Italian green olives (pitted) (combo of halved and whole)

  • Salt & pepper to taste (optional)

  • 4 tbsp. butter

  • 1/4 cup fresh Italian parsley, chopped

Add the can of tomatoes to a large mixing bowl, and break down the tomatoes with your hands. Get dirty! You want the majority of the tomatoes broken apart - but a few little chunks of tomato here and there is good. In fact, we like that! Set aside.

Bring a large pot of water to a boil for the pasta. Once water starts boiling, salt heavily. Add pasta when water is boiling. Cook pasta according to package instructions for al dente pasta. While you’re waiting for water to boil, you can start the sauce:

Coat large sauce pan or saucier with olive oil over medium heat.

Add shallot and garlic. Cook down until garlic is golden. 2-3 minutes.

Add anchovy. Break down with spoon and cook down for a couple minutes.

Add chili paste. Mix together.

Add white wine. Cook down 2 minutes.

Add capers.

Add olives. Cook down 2 minutes.

Add crushed tomatoes to the sauce pan. Salt and pepper the sauce to taste.

Turn heat to low and simmer sauce about 10 mins.

At this point your water should be boiling and you can start cooking your pasta. Once pasta is in the pot for a minute, add a couple ladles of pasta water to the sauce pan.

Using tongs, add the cooked pasta into the sauce. DO NOT drain your pasta. Lightly fold pasta into your sauce until fully coated.

Add butter. Combine into pasta until melted.

Add parsley and combine.

Twirl individual helpings onto dinner plates or pasta bowls. Serve and enjoy!

Notes:

Pasta: you can make this with any type of pasta you like, but we suggest a long pasta that can be tired. We used linguine. Other pastas that would work well: spaghetti, angel hair, long fusilli.

Chili Paste: If you have a local Italian market, you will likely find a really nice quality jar of this there. If not, Trader Joe’s makes a great one as well.
