Leo’s Italian Fried Shrimp
If an Italian Makes it, then it’s Italian.

Ingredients:
2 lbs. uncooked shrimp
2 1/2 - 3 cups all purpose flour
Salt & Pepper
Garlic powder
3 eggs, whisked
Olive oil
3 lemons, sliced into wedges
Sea salt
Shell and de-vein shrimp. It’s very important to clean the shrimp properly before you cook them.
In a medium bowl, whisk eggs until beaten.
In a large bowl, add flour and a generous amount of salt, black pepper, and garlic powder. Combine.
Dredge shrimp in egg wash so all pieces are fully coated. Then dredge shrimp in flour mixture until fully coated, shaking off excess flour. Remove floured shrimp to a tray or plate until all pieces have been coated in the egg and flour mixture.
Once all shrimp are coated, you are ready for frying.
In a large, deep frying pan, fill pan about 1/4 full with olive oil. Turn your burner on medium heat. Before you start frying the shrimp, make sure your oil is hot. You can test this by splashing the oil with a little water from your hand - if it sizzles, it’s ready.
Add shrimp piece by piece to the oil - make sure not to crowd your pan. Fry shrimp on each side - about 2-3 minutes total, or until golden. Remove shrimp to a serving tray or baking sheet, and immediately sprinkle each shrimp with sea salt and squeeze lemon juice over each piece while the shrimp is still hot. We like to use a hand juicer.
Repeat this process until all shrimp are cooked. Serve on a large platter with lemon wedges for garnish. We also like to serve with some Italian bread for making sandwiches.
